Virtual Challah Bread

Thank you for choosing to take a class with Le Dolci! We’re looking forward to meeting you and making delicious treats together! In the meantime, please look at our equipment and ingredient lists to prepare for class! We will be making Challah in bread class this week and you will learn how to shape 2 different kinds of loaves!

For this class, you will need the following equipment:

  • Weight scale (metric, in grams) 
  • Stand mixer with a dough hook (if you do not have this don’t worry bread can also be mixed by hand)
  • Rubber Spatula
  • Thermometer (used for testing internal temperature of bread)
  • A few large bowls
  • Rolling pin (or an empty wine bottle)
  • Pastry brush
  • Bench scraper metal (also called dough cutter) *optional 
  • Baking Sheet with parchment or a silicone mat (at least 2 baking sheets)
  • Pot
  • Whisk
  • Small offset spatula (if you cannot find this then a butter knife can be substitute)

Don’t forget to look in the pantry for the following ingredients, or add them to the grocery list:

  • 10 grams or 2  1/4 teaspoons active dry yeast
  • 50 grams or 1/4 cup granulated sugar 
  • 180 grams or 3/4 cup tepid water 
  • 50 grams  or 3 tablespoons vegetable oil
  • 3 eggs
  • ½  tablespoon salt 
  • 560 grams or 3.5 bread flour  (plus a little extra for dusting)

For the Garnishing 

  • Sesame or poppy seeds (just for garnishing the loaves so you do not need a lot)  
  • Nutella or jam of your choice
  • 75 grams or 5.5 tablespoon brown sugar
  • 65 grams or 6.5 tablespoon All purpose flour 
  • 70 grams or 4.5 tablespoon Butter 
  • 70 grams or 3/4 cup Quick cooking oats/rolled oats  

Please measure out all your ingredients before the class begins and be sure to join the Zoom call a few minutes before the class is scheduled to start.
